Pina Colada Salad.. Zupas inspired.

My favorite place to eat is Zupas.
 I have been trying to find a good copy cat recipe for their pina colada salad dressing ever since I first had it two years ago. They make incredible salads but I always get this one because its the hardest to re create. The dressing I mean. 

(I wish they would sell it in a bottle. I would buy it in bulk!)

Here is what they put in their Pina Colada Chicken salad:


Chicken, Pineapple, Mandarin Oranges, Coconut, Macadamia Nuts, Romaine Lettuce, & PiƱa Colada Dressing.

I keep a menu of theirs on hand at home with my recipes. Although I have to use different dressings I can use it as a guide for some really amazing salads.

My kids eat salads but usually do not like to. My oldest is starting to ask for them but the younger ones do not like salad in general so much. I decided the other day to tweak the way I gave it to them and see what they thought.

COLORS rule.

This is what I did....

Put the greens in cute little dishes. 
cut up and add Strawberries, blueberries, macadamia nuts, and coconut sprinkles. 
(I wish I had bits of pineapple but I did not this time)

I served it to them first. Before they ever got their plates. They were so hungry they gobbled it up and raved about the dressing and begged for more.

On a whim I grabbed our last Danimal berry flavored yogurt and threw it in blender to mix with some pina colada drink mix and bits of coconut.
 Blended it together and got a smooth yogurt type dressing just for the kids. 

(not exactly like Zupas but I'll dial it in more and share it here when I do)
 
THEY LOVED IT!!!

Who knew just a bit of yogurt would be so yummy on their salad.
 Now, If I can just try to copy cat that Zupas recipe more closely for me.....

My homemade favorites are the poppy seed dressing I use on Spinach salad (pretty common), my tweaked balsamic vinaigrette made from good seasons italian (my 7-yr-old's FAVORITE- even usurped RANCH!), and a taco salad dressing a friend introduced me to- it is rice vinegar based and sweet- very different and not what I would have thought to put on taco salad but AMAZING. :)

  2. I used to work for Zupas, the pi'na colada dressing recipe has actually onions in it... among other stuff.
